Reporting to the Executive Chef, the Executive Sous Chef will lead and direct a professional culinary team and student employees in executing various styles of food and production methods which work in concert with the Sonoma County food trade. The Executive Sous Chef will assist in the planning and development of recipes; menus; food specifications and production standards. The Executive Sous Chef will assist in the training and development of other food service personal, with an emphasis on the Cook series classification. The individual will assist in the purchasing of goods from multiple vendors, and will as efficiently maintain purchasing records, production reports and inventory control. The individual will be required to consistently maintain the highest level of food quality and sanitation, while maintaining budgetary goals. The incumbent will work in a decentralized environment and must be able to provide outstanding communication skills, technical skills, creativity, and leadership qualities to bring together a diverse workforce. The incumbent must have the ability to create solutions, willing to change to create positive movement to increase efficiency, quality and job satisfaction for all staff members.
The incumbent is part of the Culinary Services Team that supports the core values and the mission of the Division of Administration and Finance and that of Sonoma State University.
Major duties of the position include, but are not limited to, the following in support of Culinary Services: menu development, product ordering, and menu execution for various styles of services, from small high end, detail orientated meals to multiple item menus for large groups in excess of 3500.
Primary duties, as assigned, within the Student Center and/or Prelude Restaurant include, but are not limited to, cycle menu creation, recipe development, ordering, inventory control, production record maintenance, staff training, staff scheduling, and event production and execution. Duties also included conceptualizing multiple venue platforms for festival style events that could have attendance of 10,000.
Outside of the Student Center and Prelude Restaurant, duties will also include Board Operations, Cash Operations and Catering support. The position requires the ability to manage small to large catering events, create and execute Concession menus, as well as maintain the Production elements that feed into the multiple operation venues. Duties in this area also include the training of both full time classified staff as well as student assistants in various methods of food production.
Fiscal duties include maintaining established food cost budget goals, maintaining Labor costs objectives, controlling all fixed and general expenses by gathering and submitting information, scheduling expenditures, and monitoring expenses. The Executive Sous Chef must administer procurement and contracting authority in accordance with state and federal guidelines.
Physical duties included the ability to lift, carry, or otherwise move the position objects in excess of 50 pounds. The position stands, bends, stoops, and crouches on a regular basis. The position constantly moves to coordinate work, make deliveries, or pick up items. The position consistently speaks to students, staff, faculty and other customers either in person and/or by phone.
Administrative duties include accurately update inventories, internal transfers, and waste logs. The position must maintain accurate payroll data not only for itself, but also for assigned staff members. The position will schedule staff according to contract guidelines. The position will also have a responsibility for written evaluations for assigned staff members.
Preforms other secondary duties as assigned.
Duties are performed at Sonoma State University, primarily in the Student Center's production kitchen and/or Prelude kitchen as scheduled, assigned and directed by the Appropriate Administrator to meet operational needs. Additional duties will be performed in various other departments and locations in and around campus, requiring work both indoors and outdoors. The position will also require occasional travel, by automobile or airplane, and overnight stays away from campus. As an exempt employee you have some flexibility in your schedule however must be available during the regular campus hours Monday through Friday to meet the operational needs of the campus, department and event schedules. Early morning, evening, weekend and holiday hours will be required and will be specified to meet operational needs. Your specific start time is determined by your Appropriate Administrator. You must maintain regular and acceptable attendance at such levels as is determined by your Appropriate Administrator. This position requires the ability to speak and hear and work in kitchens which require long periods of standing and exposure to extreme cold and hot temperatures.
Qualifications This position requires a culinary arts degree from an accredited culinary school, or 5 years of equivalent training, education and/or experience, including experience in both 'high end' center of plate production styles, as well as volume cooking from groups beyond 200. A minimum of 2 years of progressive supervisory food production experience in a university, commercial foodservice, or high volume restaurant is required, with experience working in a decentralized environment preferred. The Executive Sous Chef is required to apply a working knowledge of HACCP and CalCode requirements to all kitchens worked.
The Executive Sous Chef is recognized as a technical expert, therefore must have complete knowledge of trends, flavors, presentation, with the ability to communicate these elements to both culinary staff as well as clients and customers. The ideal candidate must have a strong commitment to teamwork and customer services with excellent leadership, communication and interpersonal skills to prepare for current and future changes. The incumbent must have strong communication skills, strong personal interfacing skills, teaching skills, and be able to follow specific direction from the Executive Chef. The Executive Sous Chef must be able to develop, coordinate, and execute menus with repeated consistency. The Executive Sous Chef must have knowledge of product/supply ordering, as well as effective inventory control, keeping food and supply cost objectives in mind. The Executive Sous Chef needs to be familiar with the maintenance of labor costs, and be effective in maximizing labor resources. The Executive Sous Chef needs to be familiar with kitchen and facility design, and be able to provide insight to kitchen/serving/production area design as it pertains to potential new facilities.
The position requires strong management skills, strong client and customer communication skills, strong employee/staff communication skills, as well as strong computer skills. The Executive Sous Chef will be goal orientated and solution minded, have the ability to work in a stressful environment where constructive feedback from others in encouraged. The incumbent must demonstrate integrity and sound judgment in performing duties; possess the ability to supervise the work of staff and recommend appropriate personnel actions; be able to apply strong problem solving and conflict resolution skills and train and evaluate performance, taking corrective action as needed; deal with stressful situations while maintaining composure; and contribute to a collaborative environment utilizing exemplary communication and problem solving skills as necessary. Must have strong organizational skills and the ability to manage multiple projects and competing priorities simultaneously, adjusting quickly to changes needed on a daily basis. Must have the ability to effectively communicate with all levels within the university and establish and maintain productive and effective, inclusive working relationships amongst diverse populations including staff, faculty, administration, students, and other internal and external constituents. The Executive Sous Chef will maintain a food safety manager certification, which has been accredited by the American National Standards Institute (ANSI).
The duties of this position may include participation in decisions that may have a material financial benefit to the incumbent. Therefore, the selected candidate may be required to file Conflict of Interest Form 700: Statement of Economic Interest on an annual basis, complete ethics training within 6 months of appointment, and attend this training every other year thereafter.
The Position requires that the candidate be able to stand for extended periods, life and move boxes of food/supplies weighing over 50 pounds, and work an aggressive schedule over 40 hours per week, including nights, weekends and holidays. The individual must possess a valid California driver's license.
